salmon things you'll need to serve 2 hungry people in about 1 hour. salmon. 1 lbs. salmon with skin, preferably wild, not farm-raised, mirin, rice vinegar, sugar, ginger, fish sauce, vegetable oil. caramelized onions and garlic. half red onion, 3 cloves of garlic. pea sprouts. 1 lb. pea sprouts, crushed ginger, vegetable oil. rice. medium grain white rice, furikaki, roasted seaweed. |

step 1, marinate the salmon. in a large bowl, combine 1/2 cup mirin, 3 teaspoon sugar, crushed ginger, 1 tablespoon rice vinegar, couple dashes of fish sauce. place the salmon fillet to marinate for 20 minutes. preheat oven to 425 degrees. step 2, cook the rice. 2 cups medium grain japanese rice in rice cooker. push on and let the fuzzy logic do its work. step 3, prep the pea sprouts. wash 1 lbs. pea sprouts several times in a large bowl. step 4, prepare accoutrements. put skillet on medium heat, pour 1 tablespoon of vegetable oil. thinly slice red onion and garlic and place in pan. sauté red onions and garlic until caramelized, take out but reserve oil in pan. step 5, sear the salmon. in same skillet, while on medium heat, place marinated salmon skin side down. if there isn't enough oil, pour a little more in the pan before placing salmon in. sear on both sides, each side about 2-4 minutes. place pan with salmon, skin side up, with caramelized onions and garlic on top, in oven for 10-15 minutes. step 6, sauté pea sprouts . in a large pot or wok on medium-high, pour 1 tablespoon oil and crushed ginger. brown ginger, then place pea sprouts, stirring constantly. should be ready in 5 minutes. step 7, rice is done. open the rice cooker and fluff the rice. step 8, time to eat. take out the salmon, cut into two pieces, plate. put rice in bowl as a mold and plate. sprinkle furikaki on rice and cut one square of roasted seawood on top of the rice. pea sprouts on plate as well. enjoy! |
additional tips. choosing your salmon. wild salmon is much better than farm raised salmon, more flavor, fat, all the good stuff. a quality seafood store should have a good selection. mirin. rice wine, you can find it at your local asian supermarket. fish sauce. vietnamese fish sauce, strong fish flavor, use sparingly. you can also find it at your local asian supermarket. |
